I have three rules when it comes to food- it should be fresh, healing and alive! Vibrant, raw food is truly essential to a body full of vitality! If you think about it, whether farming or hunting and gathering, our ancestors had direct access to raw food throughout their day. However, in our modern lifestyle, we often omit it for breakfast, have a salad for lunch and if we manage to do this for five days a week, we think we’re still being pretty healthy! Growing up in nature, I remember grabbing fruit from the trees or bushes, veggies from the ground as soon as hunger struck! It was so effortless and ongoing throughout the day in my childhood adventures!
Other than natural phytonutrients and antioxidants in perfect form (many vitamins are destroyed by heat), the reason raw food is so beneficial is because of the enzyme content. Enzymes become denatured and do not work when destroyed by heat! When we eat cooked food, our organs have to produce digestive enzymes to break down our macronutrients. Being forced to produce enzymes all the time (ie. on a constant cooked food diet), organs become deficient, inflamed and enlarged. We know inflammation is the precursor to disease and all pathological states. When there aren’t sufficient enzymes to break down our food, the Immune system tries to help in digestion via white blood cells, which also contain enzymes (meant for engulfing & destroying pathogenic substances). White blood cells then go to work providing enzymes for the breakdown of food, rather than just defending the body. This is a process called Leukocytosis. (The human body is truly a work of wonder- designed for life at all costs!)
However, if your immune system has to do this on a regular basis, it can also start to attack other cells- leading to allergies and eventually, immune dysfunction or autoimmune conditions! Simply put, this is one scene that plays out in the lack of digestive enzyme consumption or eating raw food! Getting enough digestive enzymes from raw food, or even supplementing for maintenance if necessary, gives your organs, like the Pancreas, a chance to replenish! Snack on fruits & raw veg, include a beautiful salad every day, smoothies for breakfast, and enjoy raw desserts!!!
